Thai Jungle Curry + Cauliflower Thai Jungle Curry + Cauliflower THAI CURRY WITH CAULIFLOWER “RICE” {gluten-free, vegan}

This is one of my favorite vegetarian/vegan dinners.  It just feels good to get full on a bunch of colorful vegetables. You could easily substitute any number of different veggies: asparagus, green beans, a handful of spinach, etc. If cauliflower “rice” sounds too fringe/new-age-hippie I completely understand, sometimes I’m not feeling it either, so I just substitute brown rice.

Cauliflower “Rice”
2 cups cauliflower, florets only
1 tablespoons unrefined coconut oil  (olive oil works, too)
1/2 red onion, chopped fine
2 garlic cloves, minced
sea salt
1/4 cup vegetable broth

Thai Curry
1 tablespoon coconut oil
2 garlic cloves, minced
1 tablespoon fresh ginger, peeled and minced
1 tablespoon Thai red curry paste (more or less to suit your spice level)
1 tablespoon brown sugar
1 cup coconut milk (I prefer full fat, but “lite” would be fine)

This grain is one of the strongest in protein, provides minerals and flavenoids, and also produces anti-inflammatory benefits. Spicy Black Bean Sweet Potato Burger

It has taken me entirely too long to get this up. But as promised here you are. Hope you enjoy this as much as I did.

1 1/2 sweet potatoes

1/4c millet

1/2c oats (ground finely)

1/2 red onion chopped

1/4 bunch of cilantro

1 jalepeno

1 green pepper

1 clove of garlic

1tsp cumin

1 tsp chipotle powder

1/4tsp of cayenne pepper

salt & pepper to taste

Place sweet potatoes in the oven face down on a baking sheet for 20-30 min or until firmly soft at 380 degrees. Cook black beans in 3 cups of water until firmly soft. Cook millet in 1c of pure water, set aside and let cool. Meanwhile chop onion, bell pepper, garlic, jalapeno, & cilantro. In a food processor grind up the oats finely, but not to a flour consistency. Homemade Vegetable Stock – Vegan Recipe

In my quest to try to get as healthy as possible, and cut my food costs as well, I decided to try my hand at making my own vegetable stock. I found a really good recipe here: http://www.simplyrecipes.com/recipes/how_to_make_vegetable_stock/. Seemed simple enough, so I figured – why not!?!

I won’t give all the details here – you can check out the recipe on the original site, but I will tell you what ingredients I used.

  • mushrooms (not dried)
  • fennel
  • carrots
  • celery
  • onion
  • thyme
  • rosemary
  • parsley (dried)
  • salt
  • peppercorns
  • tomato paste

Let me start by saying this – I didn’t read the recipe close enough. I thought it called for one can of tomato paste, rather than the 2 tbs it really listed (a 6 oz can of tomato paste = 10 tbs). Needless to say, my broth will be extremely tomatoeee lol! I’m thinking it will be just fine though…

There is no doubt that he has challenged hard, when the average day of the Tour, the cyclist to return to his body about 8000 calories, lots of meat, to complete the protein losses of the day.


Each and every one must have recently been exposed or another video on YouTube, which encourages the movement of vegetarian or vegan diet. Some of us move on and continue as normal, some are beginning to question eating meat or animal products at all, and some people are persuaded, and inscribe on their banner vegetarian or vegan diet. “Forks Over Knives”, the Movie

One of the first health movies I watched was Forks Over Knives.  First off, I want to say that it is another great movie…a must see!   I think when I watched it, it was one of those moments for me when I knew the information hit home and that I needed to act. Along with Food Matters, I would say these two movies were the biggest recent push for me to start really paying attention to what goes into my mouth.  The Forks Over Knives diet (referred to as a plant strong diet) is very similar in some ways to a vegan diet.  I tried to define it as best as I could on the “The Diets” page of my blog.  I have to admit, I’m not sure the oil-free diet is totally for me.  Olive oil is used often in my kitchen, and I know of…
