Mushroom Soup
This is my favourite soup. Ever. Hard to believe when I think that for the first 27 years of my life I had refused to even feel the smell of mushrooms. Pregnancy turned things around and I found myself craving mushrooms and mushroom based foods.
This soup is really easy to make and tastes extraordinary! In these winter days a hearty soup like this, full of protein makes a wonderful dish.
Ingredients:
- 600g closed up mushrooms – washed and finely chopped
- 1 handful dried porcini
- 100g oyster mushrooms – washed and finely chopped
- 100/150g shiitake mushrooms – washed and finely chopped
- 1 big onion, finely chopped
- 3-4 garlic cloves, finely chopped
- 1 bunch fresh thyme (dry works just as well)
- 1/4 tsp rosemary
- salt and pepper to taste
- 1.5l vegetable or chicken stock

Oatmeal Coconut Banana Cookies (The Best Cookies in the World!)
My mom used to make these growing up and they’re my FAVORITE! I only recently asked for the recipe so I could convert it to a vegan treat:
Beat:
1 cup Earth Balance butter, 1 mashed banana, & 1 vegan egg replacer.
Then add and beat:
1 cup white sugar
1/2 brown surgar
1 1/4 cup flour
1 1/4 cup oats
3/4 cup coconut shreds
1 tsp baking powder
1 tsp baking soda
Bake at 350 for 10-12 minutes.

Quick & Easy Almond Milk (From Almond Butter)
I wanted to make an almond milk that would be super quick & easy, and decided to follow the same steps that I use to make my Quick Cashew Milk recipe. The results were fabulous, and I’m hoping that you’ll enjoy it too!
Quick & Easy Almond Milk (From Almond Butter)
What you’ll need:
* 5 tblsp home made Almond Butter
* 4 cups filtered Water
* 3/4 tsp Vanilla (optional)
* 1 dropper full Liquid Stevia (optional)
What you’ll do:
Fill Vita-Mix or blender container with cold, filtered water. Add in almond butter, vanilla (if using), and liquid stevia (if using). Blend on high speed until well incorporated and enjoy!

Vegan Walnut Pesto
Made some pesto using this recipe. It’s delicious. I cut the oil to 1/3 cup and cut the salt in half, but that’s me being extra healthy. It’s fine the way it is.
