Coyote Essence
I make a spice blend which I call “Coyote Essence”. It contains, in descending order of importance:
smoked paprika
chipotle powder
cayenne pepper
granulated garlic
onion powder
crushed red pepper flakes
fresh ground black pepper
dried basil
salt
cinnamon.
I won’t talk about quantities, not because it’s secret or anything like that but because I’m always futzing with it. This is the kind of thing that everyone should do for themselves, to heir own tastes. I keep it in a shaker and use it a lot. I particularly like it on popcorn and on grilled corn-on-the-cob.
