Creamy Wild Mushroom Risotto

risottoWow, has it really been this long since my last post?! I guess the holidays will do that. I hope everyone had a great holiday season and so far a good 2014. I’ve made this risotto several times now, and I swear we love it more each time. Sure, there’s a little prep work involved, as well as some constant stirring, but I promise you, it’s worth it. You can even read a book while you make this. Seriously. Have a book  handy because you  might as well get some reading done as you stir. (A glass of wine wouldn’t hurt either).

INGREDIENTS:

3/4-oz pkg. dried shiitake mushrooms
3/4-oz pkg. dried porcini mushrooms
3 C vegetable broth
3 C fresh spinach, chopped
1/8-1/4 C lemon juice
1/2 tsp salt
1/2 large onion, chopped small (about 1 C)
2 cloves garlic, minced
2 Tbs olive oil, divided

Massage your kale.

Had a phone call from friend bit ago but I didn’t pick up because my hands were messy. I returned the call and said, ” Sorry I missed the call but I was massaging my kale” A few seconds of silence then, “You were what…?”
Thus, I share my massaged kale salad.
The ingredients: 1 bunch of organic kale ( I prefer alligator kale because it’s milder but any variety will do), 1 avacado, 1 stalk of celery, 1/2 cup of diced onion, 12-15 cherry tomatoes, Juice of one lemon, 1 handful of baby spinach leaves, 1/2 cup of walnuts, 1T of pumpkin seeds.
First rinse and de-stem the kale, placing it into a big bowl. Begin massaging it with your hands. Use a your hand like you might if you were massaging a loved ones shoulders. Keep doing it and after a minute or two you will feel it begin to get softer and liquid will begin to come out. Massaging breaks down the cells in the kale, making it softer and making the nutrient more easily absorbed. I also shred the kale while I’m massaging. Now add the whole avocado and the spinach. Get back in there with your hands ans squish the avacodo around with the greens until it is broken down and everything is thorougly coated. Now add the lemon juice, the other ingredients including the seasoning (I like black pepper, granualted garlic, and Asian 5 spice). I then add the walnuts and just a teaspoon of Himalayan pink salt. Other things you might add, cucumber slices, hemp seed, coconut bacon, use you imagination. Give your kale a massage.
