As many of you already know, kale is very good for our health since it is loaded with all kinds of antioxidants and essential nutrients. So, here is one of my family’s favorite kale recipes that we first tasted at a favorite restaurant on Cape Cod.
~ A head of cauliflower, chopped into small florets
~ About 8 cups of rinsed kale
~ 1/2 cup of sprinkled blue cheese ( optional)
Chop half a head of cauliflower into small florets and saute in a tablespoon of olive oil at medium heat for three minutes. This will soften and crisp the cauliflower and remove some bitterness.
Remove from skillet and sprinkle over half a head of finely chopped kale. (Kale tastes better in smaller pieces!)
Drizzle two tablespoons of olive oil and 1 tablespoon of lemon juice. Sprinkle with pepper and garnish with small crumbles of blue cheese.
