soupThis is my favourite soup. Ever. Hard to believe when I think that for the first 27 years of my life I had refused to even feel the smell of mushrooms. Pregnancy turned things around and I found myself craving mushrooms and mushroom based foods.

This soup is really easy to make and tastes extraordinary! In these winter days a hearty soup like this, full of protein makes a wonderful dish.

Ingredients

Ingredients:

  • 600g closed up mushrooms – washed and finely chopped
  • 1 handful dried porcini
  • 100g oyster mushrooms – washed and finely chopped
  • 100/150g shiitake mushrooms – washed and finely chopped
  • 1 big onion, finely chopped
  • 3-4 garlic cloves, finely chopped
  • 1 bunch fresh thyme (dry works just as well)
  • 1/4  tsp rosemary
  • salt and pepper to taste
  • 1.5l vegetable or chicken stock
  • a bit of olive oil/coconut oilChopped mushies
