Spicy Black Bean Sweet Potato Burger

It has taken me entirely too long to get this up. But as promised here you are. Hope you enjoy this as much as I did.

fa8a18b8c8d411e2bfc922000a9e08f9_71 3/4c of fresh cooked black beans

1 1/2 sweet potatoes

1/4c millet

1/2c oats (ground finely)

1/2 red onion chopped

1/4 bunch of cilantro

1 jalepeno

1 green pepper

1 clove of garlic

1tsp cumin

1 tsp chipotle powder

1/4tsp of cayenne pepper

salt & pepper to taste

Place sweet potatoes in the oven face down on a baking sheet for 20-30 min or until firmly soft at 380 degrees. Cook black beans in 3 cups of water until firmly soft. Cook millet in 1c of pure water, set aside and let cool. Meanwhile chop onion, bell pepper, garlic, jalapeno, & cilantro. In a food processor grind up the oats finely, but not to a flour consistency. Homemade Vegetable Stock – Vegan Recipe

In my quest to try to get as healthy as possible, and cut my food costs as well, I decided to try my hand at making my own vegetable stock. I found a really good recipe here: http://www.simplyrecipes.com/recipes/how_to_make_vegetable_stock/. Seemed simple enough, so I figured – why not!?!

I won’t give all the details here – you can check out the recipe on the original site, but I will tell you what ingredients I used.

  • mushrooms (not dried)
  • fennel
  • carrots
  • celery
  • onion
  • thyme
  • rosemary
  • parsley (dried)
  • salt
  • peppercorns
  • tomato paste

Let me start by saying this – I didn’t read the recipe close enough. I thought it called for one can of tomato paste, rather than the 2 tbs it really listed (a 6 oz can of tomato paste = 10 tbs). Needless to say, my broth will be extremely tomatoeee lol! I’m thinking it will be just fine though…

“Forks Over Knives”, the Movie

One of the first health movies I watched was Forks Over Knives.  First off, I want to say that it is another great movie…a must see!   I think when I watched it, it was one of those moments for me when I knew the information hit home and that I needed to act. Along with Food Matters, I would say these two movies were the biggest recent push for me to start really paying attention to what goes into my mouth.  The Forks Over Knives diet (referred to as a plant strong diet) is very similar in some ways to a vegan diet.  I tried to define it as best as I could on the “The Diets” page of my blog.  I have to admit, I’m not sure the oil-free diet is totally for me.  Olive oil is used often in my kitchen, and I know of…

Procrastination and miso soup

So, it has been over a week!  Tut tut.  Basically it was a week where drinking and socialising took over and I let it. Well no more!  
 
After work today I did my yoga (grounding and refreshing) and I made miso soup, which was heavenly.  Basically, it consisted of this:  
 
Chop the following:
Four stalks of asparagus into 3/4 inch pieces
A good handful of green beans into 3/4 inch pieces 
Two cloves of garlic (roughly sliced)
Seven brown mushrooms (medium size and roughly chopped)
Five leaves of pak choi (roughly chopped)
 
Then:
 
Stick some water in a pan to boil – I guesstimated (about five cups?)
Add some vegetable stock powder and stir
Once simmering add asparagus, green beans, garlic and mushrooms and leave to simmer
 
Once everything in pan is tender, add one block of tofu (cubed) along with…

Raw: Sour Cream & Onion Kale Chips

I’ve had some of the store bought kale chips in this particular flavor and I did enjoy them, but let me just say… These ones are so much better! Not to toot my own horn or anything like that… Seriously, give these a shot. I just kind of threw the ingredients together by taste and ended up with something that I’m going to make again and again since they keep disappearing!

Sour “cream” & onion mixture per one medium head kale:

  • 1 1/2 Cup Raw Cashews (soaked for 3-4 hours and drained)
  • 1/4 Cup Chopped White Onion
  • 2-3 Scallions
  • 2 Tbsp Lemon Juice
  • 2 Tbsp Nutritional Yeast
  • 1 Tbsp Apple Cider Vinegar
  • 1 tsp Sea Salt
  • Water (as needed to make a creamy texture)

Watermelon kombucha? Why not!!

I’ve been at raw food living full bore he last few weeks. Not saying I haven’t had ANY cooked food, but the vast majority of my diet has been raw. I’m juicing every morning, eating raw for lunch &/or dinner (I don’t always eat lunch), and trying to stick to 80% or more raw foods with great success.

Today I was eating some watermelon for lunch and wondered if it would juice well. Let me tell you – it did!!! As I stood marveling at the copious amount of juice I know have, I glanced to my continuous booch system and thought to myself,”I bet THAT would be good!!!”

So, I mixed about 1/2 & 1/2 booch & watermelon juice in 4 bottles. I added chia seeds to 2, and will refrigerate them for use whenever. I’m going to let 2 ferment and see what happens.

A repeat of yesterday, but I had a final kiwi that needed eating and thought it went well with this type of cereal (lucky really, as that was the only kind I had in the cupboard).

Lunch

Cranberry and watercress salad, french bread, vegan chocolate

Sainsbury’s seem to sell a nice par-bake bread that’s labelled as vegan. It’s the Basics range, but the packet boasts that it uses real French flour. Last night I’d thrown together a quick salad, and this morning I gave the par-bake loaf 10 mins in the oven. I had to pack it into my bag while still warm, but I don’t think it did any harm (and made my bag smell really nice). The salad was just watercress, cucumber, dried raisins/cranberries and a few stray pine nuts that were left over from a batch that…
