In my quest to try to get as healthy as possible, and cut my food costs as well, I decided to try my hand at making my own vegetable stock. I found a really good recipe here: http://www.simplyrecipes.com/recipes/how_to_make_vegetable_stock/. Seemed simple enough, so I figured – why not!?!
I won’t give all the details here – you can check out the recipe on the original site, but I will tell you what ingredients I used.
- mushrooms (not dried)
- fennel
- carrots
- celery
- onion
- thyme
- rosemary
- parsley (dried)
- salt
- peppercorns
- tomato paste
Let me start by saying this – I didn’t read the recipe close enough. I thought it called for one can of tomato paste, rather than the 2 tbs it really listed (a 6 oz can of tomato paste = 10 tbs). Needless to say, my broth will be extremely tomatoeee lol! I’m thinking it will be just fine though…
